Fate Christmas Muffins

These muffins have all the lovely tastes of Christmas – lots of spices and citrus. They are wonderful as breakfast on a cold winter’s morning with a cup of coffee. Fate Christmas Muffins freeze well.


This muffin recipe can be made with or without dried fruit - it's lovely either way. We love adding a mixture of dried cranberries, cherries, raisins and blueberries, but any combination of dried fruit would work well!


INGREDIENTS

350g Fate Low Protein All Purpose Mix

120g soft light brown sugar

1½ tsp baking powder

120g soft margarine

2tsp ground mixed spice

grated rind of 2 medium lemons

275ml pure orange juice

170g dried fruit (optional)


Preheat oven Gas 6, 200ºC 400ºF.

Place the Fate All Purpose Mix into a mixing bowl. Add the sugar and baking powder. Stir. Add the mixed spice and the lemon rind. Stir. Add the margarine and the orange juice, and using a wire whisk, mix quickly for 1 minute until well blended and smooth. Stir in the dried fruit (optional).




Divide the mixture between 12 large muffin paper cases set inside a muffin tin. Bake in the preheated oven for 20-25 mins until risen and golden brown. The muffins will brown very quickly in the oven. Check on them after about 15 mins in the oven and if you think they are brown enough, just turn the oven down a little until they are cooked through.


Place on a wire rack to cool.
