When the announcement came that the official dish of King Charles III’s Coronation was a quiche I couldn’t resist making a low protein version! The combination of vegetables and fresh parsley makes for a summery quiche, which is perfect served with crisp fresh salad. I use a shallow flan tin about 20-22cm (8-9 inches) in diameter to make a large quiche, great for a party or celebration lunch. Fate Coronation Quiche freezes well, cut into portions before freezing. INGREDIENTS
For the filling
little oil for cooking 500g butternut squash, peeled, deseeded and cut into small cubes 250g onion, finely chopped 300g peppers of any colour, cut into small pieces 2-3tbsp chopped fresh parsley salt and pepper to season 120g Fate Low Protein All Purpose Mix ½tsp salt ½tsp baking powder 20g butter, at room temperature 60g suitable light mayonnaise 100ml water For the pastry
250g Fate Low Protein All Purpose Mix 125g block margarine pinch of salt 60ml water extra Fate Low Protein All Purpose mix to roll out
For topping 80g suitable low protein cheese 2-3 spring onions, finely sliced
First, prepare the filling:
Heat the oil in a large frying pan, and when it’s hot add the chopped onion and butternut squash. Stir occasionally and cook for around 10 minutes until golden and cooked through but not too soft. Place into a dish to cool a little.
Add a little more oil to the pan and when it is hot, add the peppers. Fry until cooked, but not
too soft. Add into the bowl with the other vegetables. Stir in the parsley and season with salt and pepper.
Then make the pastry:
Place the Fate Low Protein All Purpose Mix and salt into a mixing bowl. Rub in the margarine until the mixture resembles fine breadcrumbs, then continue to rub in until it looks like coarse breadcrumbs.
Add the water and use a large metal spoon to mix into a smooth soft dough. Dust the work surface with a little Fate Low Protein All Purpose Mix and knead the pastry for a couple of minutes until smooth.
Dust the work surface lightly with Fate Low Protein All Purpose Mix. Roll the pastry into a circle a little larger than the top of the tin.
Using a rolling pin to help you, carefully lift the pastry into the tin. Gently press the pastry into the corners. Run a knife around the edge of the tin to cut away any excess pastry. Crimp the top edge of the pastry if desired.
Put together the filling:
Place the Fate Low Protein All Purpose Mix, salt and baking powder into a small mixing bowl. Add the butter and mayonnaise. Add the water and using an electric whisk, mix well until it is thick and creamy. Stir the vegetables into the mixture (the vegetables don’t have to be completely cold).
Put the quiche together:
Place the mixture into the pastry case. Use a spoon to smooth over the top.
Bake in the preheated oven for 25-30 minutes until the mixture is firm to the touch. Regularly check on the quiche and lightly cover it with foil if the pastry is browning too much. 5 minutes before the end of cooking top the quiche with the grated low protein cheese and spring onions, and return to the oven. Leave to cool for a couple of minutes before removing from the tin. Serve hot or cold.
