This recipe makes about 1½ litres of rich tasty gravy that the whole family will enjoy. It is so quick and easy to make! The ingredient quantities are approximate. Fate Family Gravy freezes well, but it's best not to thicken with cornflour first. It is best defrosted, reheated and then thicked just before serving.
INGREDIENTS
2 tbsp oil
2 small onions
2 medium carrots
2-3 sticks of celery
7-8 medium sized mushrooms
1 x 400g tin of tomatoes
800ml water
salt and pepper to season
few drops suitable gravy browning
Chop all the vegetables roughly. They do not have to be even sizes. Heat the oil in a pan until hot and add the vegetables. Place a lid to half cover the pan, and cook over a high heat for about 10-15 mins until browned, this will give the gravy a lovely flavour, but take care it doesn’t burn. Stir occasionally.
Add the tin of tomatoes and the water. Season with salt and pepper. Then add a few drops of gravy browning to give a rich brown colour.
Cook for another 15-20 mins until the vegetables are soft.
Liquidise until smooth. Return to the pan and bring back to the boil.
If you like, the gravy can be thickened by mixing a little cornflour with a little water until smooth and adding it to the gravy. Bring back to the boil, stirring all the time and simmer for about 1 minute until thickened.
Serve hot.
