This cake reminds me of the cake my mum used to make at home when I was little. It has a delicious light citrus flavour. It is lovely served sliced with a cup of tea, or try it warmed and served as a pudding with some fresh summer fruits. Fate Maderia Cake freezes well.
INGREDIENTS
250g Fate Low Protein All Purpose Mix
100g light soft brown sugar
1 tsp baking powder
grated rind of 1 lemon
90g soft margarine
200ml pure orange juice
Preheat the oven Gas 5 190°C 375°F
Place the Fate Low Protein All-Purpose Mix into a mixing bowl.
Add the light soft brown sugar, baking powder and the grated rind of the lemon.
Add the soft margarine and then pour in the orange juice. Use a wire whisk to blend the ingredients together to a smooth mixture. It should take only 1-1 ½ mins.
Pour the mixture into a greased 1kg loaf tin (2lb). Bake in a preheated oven for about 40-45 mins, it should be risen and golden brown. Look at the cake after about 20 mins, if it is getting very brown, just turn the oven down a little.
When the cake is cooked, a skewer pushed into the middle should come out clean. Leave in the tin for about 5 mins, then place onto a wire rack to cool.
