These sausages are a variation on the basic recipe and the ones we make all the time now. They are lovely served as hot dogs or served with suitable vegetables and gravy. Fate Sausages freeze well. Freeze them uncooked soon after shaping. When needed the sausages can be cooked from frozen.
INGREDIENTS
For the flavouring:
2tbsp oil
little butter for cooking
100g onion, finely chopped
75g carrot, grated
75g mushrooms, finely chopped
2tbsp soy sauce, light or dark
For the sausages:
220g Fate Low Protein All Purpose Mix
½tsp salt
ground black pepper to season
1tsp dried sage
1tsp dried oregano
50ml oil
50ml suitable tomato ketchup
80ml water
extra Fate All Purpose Mix to shape

Place a large frying pan onto a high heat. Add the oil. When it is hot, add the butter. As soon as the butter is melted, add the onion, carrot and mushrooms. Cook on a high heat, stirring for 4–5 mins until the vegetables are browned but not too soft. Keep the heat on high because it is important that any moisture from the vegetables evaporates. Add the soy sauce, and cook for about a minute so that this evaporates as well. Leave to cool.
Meanwhile, in a mixing bowl, stir together the Fate All Purpose Mix, salt, black pepper, sage and oregano. In a baby’s bottle measure the oil up to the 50ml mark, then add 50ml ketchup on top of the oil (up to the 100ml mark). Then add 80ml water, to make 180ml liquid all together. Stir. Add the cooled vegetables to the dry ingredients. Stir. Pour in all the liquid. Stir well to make a thick but creamy mixture. Leave to rest for about a minute.
Take a large spoonful of the mixture (around 50g) and shape into a sausage shape on the work surface, using a little extra Fate All Purpose Mix to prevent sticking.
The sausages can be shallow fried in a little oil until golden brown, or brushed with oil and cooked under the grill or on the BBQ.
